순창 곡물맥주 빚기 강좌

알고 마시면 더 맛있는 수제맥주, 필스너 Intro 한국인들에게 가장 익숙한 맥주의 색깔이라면 역시 황금빛이죠! 청량감이 강하고 시원한 느낌을 주는 라거류의 맥주는 우리가 평소에 가장 즐겨 마시는 맥주이기도 한데요, 오늘은 황금빛 자태의 주인공, 필스너에 대해서 알아봅니다.👉 체코에서 태어난 필스너 필스너(Pilsner)는 1842년 체코의 플젠(Pilsen)지방에서 태어난 하면 발효식 라거맥주입니다. 필스너의 투명한 황금빛 색깔에는 재미있는 역사가 있는데요, 라거의 원조라고 할 수 있는 독일식 라거맥주는 원래 어두운 색깔의 둔켈라거였습니다. 여기에 쓰이던 독일식 하면발효 효모가 체코로 건너와 연수를 만나며 예상치 못하게 황금빛 색깔의 라거를 탄생시켰던 것이죠, 한편 쌉쌀한 맛을 기본으로 고소한 끝 맛을 가지고 있는 필스너는 알코올도수가 약 3..

맥주 제조과정 ① 단계는 보리를 발아시키는 과정입니다. 보리의 당분은 딱딱한 껍질 안 전분의 형태이기 때문에 추출하기가 힘듭니다. 보리가 발아하면 내부에서 변화가 일어나면서 전분을 분해하는 효소인 아밀라아제가 생성됩니다. 이를 위해 먼저 보리를 침맥조에 담가 이틀 가량 발아에 필요한 수분을 흡수시킨 후, 일주일가량 따뜻한 곳에서 싹을 틔웁니다. 이렇게 발아된 보리는 파란색을 띄기 때문에 '녹맥아'라 부릅니다. 녹맥아는 수분을 많이 함유하고 있기 때문에 더이상의 발아과정을 막기 위해 화로에서 열을 가해 발아를 중지시킵니다. 이 과정을 다 거치면 맥주의 주원료인 '맥아'가 됩니다. 보통 보리를 맥아로 만드는 데 약 10일의 시간이 걸립니다. ② 단계는 맥아의 성분이 물에 용해되기 쉽도록 맥아를 분쇄하는 과정입니다. 분쇄과..
